In the illustrious terrains east of Paris, Champagne emerges from its humble beginnings, rooted in the dedicated efforts of families growing Chardonnay, Pinot Noir, and Pinot Meunier vines. When producing Champagne, the CIVC sets an annual yield limit in the vineyards and allows wineries a maximum yield of 2,550 liters per 4 metric tons of grapes. The legal alcohol range is between 9-13% abv, which is determined after a minimum of 15 months of bottling conditioning before the product can even begin to start preparing for sale. The classification by dosage levels further underscores the meticulous craftsmanship, where the exact blend of sugar in each bottle's proprietary liquor remains a closely guarded secret of its producers.
